To make soya mincemeat, you can take 1 cup of soya chunks or granules.
Wash it in water and soak it for about 10 minutes.
Now squeeze out the water from the soya chunks and put the chunks in a mixer and grind them lightly.
You do not have to grind it very finely. Grind it lightly and take it out.
Add 1 teaspoon salt, 1 tablespoon ginger garlic paste, half cup curd which should not be sour to the ground soya chunks.
Now add 1 tablespoon meat masala, it is veg, add half teaspoon turmeric powder, 1 tablespoon coriander powder and mix.
Now for the gravy, finely chop 3 onions and grate 1 inch ginger and grind 1 inch ginger.
Take half a cup of boiled green peas to add to soya mince.
Grind 1 tomato and add ginger and green chilli to it and prepare a paste.
Now add desi ghee in the pan and add half spoon cumin seeds in it, then add 1 pinch of asafoetida and chopped onion.
You have to cook the onion till it becomes deep brown and when it turns brown then understand that the onion is roasted.
Now add 1 teaspoon Kashmiri red chilli and turmeric to the onion and mix the peas.
After frying for a while, add tomato puree to it and add salt to it.
When the tomatoes leave the oil, you have to add soya mince to it and fry it for a while.
Now cover it and cook it on very slow gas for about 10 minutes.
Mix the mince while stirring and add long chopped green chillies, ginger rings and green coriander into it.
Now add 1 spoon of desi ghee or butter on top and serve the mincemeat.
You can eat it with roti, paratha or pav. This will give the exact taste of mutton keema.
