The festival of Ganesh Chaturthi 2024 has started from 07 September. Bappa’s devotees celebrate this festival for 10 days. In these 10 days, devotees of Lord Ganesha worship him by installing him with reverence in their house. Not only this, devotees of Ganesh ji also offer many different things to please him in these 10 days. After modak, laddu, one such thing is named Raskadam. Raskadam is a Bengali sweet, which is often offered to Bappa during Ganesh Chaturthi. This sweet is made from milk and chenna. Let’s know what is the method of making Raskadam.
Ingredients to make Raskadam-
-1 liter milk
-Juice of one lemon
-4-5 saffron strands
-1 tablespoon corn flour
-½ cup powdered sugar
-½ cup dry coconut
-250 gms sugar free yogurt
How to make Raskadam-
To make Raskadam, first heat one liter of milk and saffron threads in a large vessel. When the milk starts boiling, reduce the heat and boil it for about 10 minutes more. After this, add lemon juice to the milk and keep boiling the milk on medium flame. The milk will curdle completely in two to three minutes. Now turn off the flame and filter the milk using a muslin cloth. Wash the chenna 2-3 times with water to remove the smell of lemon. Now squeeze the muslin cloth and remove excess water from the chenna. Take out the chenna in a plate and start pressing it for 10 minutes using the edge of your palm. After this, mix one tablespoon of corn flour well in the chenna and prepare small balls of it.
Now put one cup of sugar and one cup of water in a pressure cooker and let it boil on low flame till the sugar dissolves. After that put the chenna balls in the syrup, close the lid of the cooker and let it whistle once. Take special care to let the pressure of the cooker release on its own. Now take out the prepared Raskadam in a vessel and coat it with sweet khoya. To prepare sweet khoya, grate the bland khoya and add half a cup of powdered sugar to it. After this, make small balls of khoya, flatten them and place them on top of the rasgulla and cover them completely. Roll these balls on dry coconut and keep them in the fridge to set for a while. Raskadam prasad is ready to be offered to Ganpati.
