Ingredients for making Kuttu Samosa-
-1/2 cup buckwheat flour
-1/2 cup water chestnut flour
-rock salt
-Water as needed
-4-5 medium sized potatoes
– Few cashews, raisins
-1 tsp cumin
– 1 tsp cayenne pepper
Ghee as needed for kneading the dough
-1/2 tsp lemon juice
-3-4 green chilies
Groundnut oil for frying
Method for making Kuttu samosas-
To make Kuttu Samosa, first of all, mix buckwheat flour and water chestnut flour with ghee and mash it well. After this, add water and knead a light hard dough. Now keep this dough aside for a while. Now boil potatoes and mash them. Take some ghee in a pan and add cumin seeds to it. When cumin seeds are roasted, add cashews, raisins etc. and then when they turn golden brown, add potatoes and rock salt. Switch off the gas and add lemon juice to it. Now make small balls of the dough and roll them into rounds and then cut them in the middle and fill them by folding them in a triangular shape like normal samosas. Now fry the samosas in hot oil and serve with fruit chutney.
