Ingredients for Tomato Pulao-
4 cups basmati rice
3 tomatoes
1 tsp chana dal
1/4 cup raw peanuts
1/2 tsp asafoetida
1 tsp red chili powder
2 tbsp ghee
salt as required
3 onions
1 tbsp mustard seeds
2 tbsp chopped ginger
14 cups cashews
3 stalks curry leaves
1/3 tsp turmeric
4 tbsp refined oil
4 tbsp chopped coriander leaves
How to make Tomato Casserole-
Take out the rice in a big bowl. Wash it thoroughly 3-4 times and then wash it once under running water. Now boil 8 cups of water in a vessel. Add rice to the pot and cook till all the water dries up. Heat refined oil in a pan. Add mustard seeds, chana dal and chopped ginger. Fry them for a minute. Now add peanuts and stir till cooked. Now add cashew nuts, curry leaves and asafoetida. Mix all the ingredients well. Now add chopped onions and fry till golden brown. Now add chopped tomatoes and salt as per taste. Cook tomatoes for 6-8 minutes or until soft. Now add Kashmiri red chili powder, turmeric powder and cook for a minute. Lastly, add desi ghee, so that the taste and aroma increase. Now add boiled rice and finely chopped green coriander to the tomato masala and mix. Mix well, cook for the last one minute and switch off the flame. Tomato pulao is ready.
