People in Uttar Pradesh, Bihar and Rajasthan make this vegetable with great gusto. In Rajasthan it is called gram flour gatta ki sabzi. It is very easy to make the delicious gram flour sabzi. Ingredients for making Besan ki Sabzi
Gram flour – 1 cup, onion 1, turmeric – 1 tsp, cumin – 1 tsp, mustard – 1 tsp, yellow mustard – 1 tsp, coriander powder – 2 tsp, green chilli – 3, red chilli powder – green coriander leaves, salt – according to taste
Method of making Gram Flour Vegetable
Step 1: To make gram flour sabzi, first sift the gram flour in a vessel. While making the gram flour batter, keep in mind that the consistency should not be too thick or too thin. Add turmeric, coriander powder, red chili powder, coriander leaves to this batter and mix. Now you can take the help of a whisk to beat them.
Step 2: Now place a pan on medium flame to heat. After the pan is heated, apply oil on it. Now prepare gram flour dosa by pouring the gram flour batter on the pan. When it is cooked, remove it from the pan.
Step 3: Now we will prepare the vegetable gravy. In a mixer jar, grind 1 onion, 1 teaspoon cumin seeds, 1 teaspoon black mustard seeds, 1 teaspoon yellow mustard seeds, 2, 3 black peppers, 6-7 garlic cloves, turmeric – 1 teaspoon, and 2 teaspoons dry coriander very finely.
Step 3: Now turn on the gas and put a pan and add mustard oil. Tadka with half a teaspoon of fenugreek seeds and Kashmiri degi mirch in the oil. After that add the grinded spices in it. Now let this gravy cook well. After some time, add tomato puree and 2 green chillies in it.
Step 4: While the gravy is cooking, cut the prepared gram flour dosa into the shape of gatta and roast it well in a pan after adding oil.
Fifth step: When the gravy is cooked, add the gram flour balls to it and add 1 glass of water and let the vegetable cook for some more time. When the vegetable is cooked, add dried fenugreek and salt according to taste. Now eat this vegetable with hot rice.
