Curd potatoes are eaten with great gusto in Uttar Pradesh and Madhya Pradesh. This is a vegetable which you can eat with roti, paratha or rice. The special thing is that making curd potatoes is quite easy. When there are no vegetables in the house, this vegetable can be made with just potatoes and curd. How to make curd potatoes?
To make curd potatoes, first boil the potatoes. If making for 2 people then 2 medium potatoes are enough.
Now blanch the curd, thin it a little and prepare the spices.
To make curd potatoes, chop 1 medium onion, green chilli and 7-8 cloves of garlic.
After boiling the potatoes, peel them and cut them into thick pieces.
Take a pan and add mustard oil in it. When the oil is hot, add asafoetida and cumin.
Now add 1-2 dry sabul red, finely chopped onions, green chillies and garlic and fry.
Add turmeric and some red chilli to it, stir and then add potatoes to it.
Let the potatoes cook in the spices for 5 minutes and then add the curd prepared by beating it.
It is important to keep stirring the vegetable continuously as soon as the curd is added, otherwise it bursts.
Keep stirring the curd continuously on medium flame and then keep stirring for 1-2 boils.
You can keep it thick or thin as per your choice. After boiling for about 10 minutes, add salt.
Let the curd potatoes boil for two more minutes, then add green coriander and turn off the gas.
Delicious curd potatoes are ready, you can eat them with roti or rice.
