Stuffed Bitter Gourd Recipe
First of all, to make stuffed bitter gourd, take 8-10 medium sized bitter gourds.
Now lightly peel the bitter gourd from the top and remove the seeds from inside the bitter gourd and peel them.
Apply salt to bitter gourd and leave it like this for about 15-20 minutes.
To prepare bitter gourd masala, you have to take about 2-3 tablespoons of fennel, 2 teaspoons of whole coriander and nigella seeds.
Put coriander and nigella seeds on the pan and lightly dry roast them and grind them finely with fennel.
Now grate about 2-3 large onions coarsely. Crush 5-6 cloves of garlic and a 1 inch piece of ginger and add it.
Now mix ground spices in onion, garlic and ginger. Add 2 tablespoons mango powder in it.
Mix some red chilli, salt and turmeric and mix all the spices together in the pan.
Wash the bitter gourd with clean water to remove salt and dry it slightly.
Now open the bitter gourd and fill it with spices. Similarly, first fill all the bitter gourds and keep them aside.
Now tie them with some thread. So that they do not open while turning and the masala does not come out.
Now take a flat pan or a wide pan and heat mustard oil in it.
Take a little more oil so that oil spreads on all the bitter gourds from one side.
Add asafoetida and cumin seeds in oil, set all the bitter gourds in it and cover it.
Keep the gas flame medium and when the bitter gourd becomes light brown from below, turn it.
Similarly, roast the bitter gourd from both the sides and then slow down the gas flame.
Open the bitter gourd and keep cooking it until it becomes slightly crispy. Turn the bitter gourd occasionally. So that it gets cooked from all sides.
Delicious stuffed bitter gourd is ready. You can easily eat them by keeping them in the fridge for 15 days.
