Gaddi maddi ki sabzi is widely eaten in Mathura Vrindavan and its surrounding areas. Be it a bhandaar or a wedding or any other function, this sabzi is definitely made. In simple language, it can also be called mixed veg which has a little gravy. Gaddi ki sabzi is very tasty with puri, paratha or roti. This sabzi can be made from the leftover vegetables at home. Know how to make Gaddi maddi ki sabzi?
To make Gaddi Maddi Sabzi you need 2 potatoes, 3-4 tomatoes, 3 small brinjals, 250 grams pumpkin, 1 small cauliflower.
Take 1 capsicum, 2 radishes, 4 pointed gourds, 1 carrot, 1 green chilli, 1 inch piece of ginger and 1 bunch of spinach.
You can also add any other vegetables as per your choice.
This vegetable is tempered with Pach Phoran i.e. cumin, mustard, fennel, fenugreek and celery.
To prepare the vegetable, you also need some whole spices, which include cloves, black pepper, bay leaves and dried red chillies.
You can also use some asafoetida and curry leaves in the vegetable.
You can also make it in oil or mustard ghee. You can keep the spices as per your choice.
Wash all the vegetables and cut them into medium sized pieces. You can cook the vegetables in a pan or pressure cooker.
Place the cooker on the gas, add ghee and add the whole spices and other seasoning spices.
Now add turmeric, red chilli powder, coriander powder and Kashmiri red chilli powder to it.
Now chop the ginger pieces and green chillies and fry them. When the spices are fried, add all the vegetables.
Now stir the vegetables and mix them well with the spices.
Add salt according to taste and add 1 cup water and cover it with the lid of the cooker.
You do not have to close the lid of the cooker and keep stirring the vegetable in between.
Now when the vegetable becomes soft, mash it lightly and cook for some time without covering the cooker.
When the vegetable is ready, add garam masala to it and while serving, add chopped green coriander.
Gadh Madh sabzi is ready which you can eat with Puri or Paratha and enjoy.
