In India, you will find many wonderful dishes and their unique names. One such famous dish of Uttar Pradesh is Dal Ka Dulha. You may be laughing on hearing this name. But Dal Ka Dulha is made in most of the houses of UP. This dish is made not only in Uttar Pradesh but also in Gujarat and Rajasthan, but in some places it is known by different names like Dal Dhokli or Dal Pitha. Today we are telling you how to make Dal Ka Dulha which is a complete food in itself. You must try Dal Ka Dulha which is full of protein and carbohydrates once. If you eat it with chutney and pickle, its taste will increase even more. Know the recipe of making Dal Ka Dulha.
Take 1 cup of mixed arhar and lentil and half cup of chana dal and soak them for 1 hour.
If you want, you can make it with only arhar dal, but mixed dal tastes better.
Add a little more water than you add for dal and add 1 big onion, chopped coarsely.
Chop 2 large tomatoes and add salt, half a teaspoon of garam masala, half a teaspoon of red chilli powder, coriander powder and turmeric powder to the lentils.
Add about 1/4 cup of oil or ghee to the lentils and add half a teaspoon of ginger-garlic paste.
Now mix all the ingredients and cook the dal for 2 whistles on high flame and 1 whistle on low flame.
Take a pan and roast 2 teaspoons coriander seeds, 1 teaspoon cumin seeds and 4 red chillies till they turn crispy.
Now grind all these things well and make a powder and then add this spice to it.
Put 2-3 tbsp of Desi Ghee in the pan and roast 1 big onion chopped lengthwise in it.
Ghee and onion are eaten by adding it on top of dal dulha, so take it out and keep it aside.
Now add some salt to 2 cups of flour and knead soft dough like roti.
You can also add celery or a little oil to the flour, this makes the dal groom soft.
Now take a big dough ball and roll it into a thick roti like a biscuit and cut it with a glass or lid.
Now open the cooker and add 1 more glass of water to the lentils. When the lentils start boiling, put the flour patties in it.
While making dough patties, apply dry flour on them so that they do not stick to each other.
Cook it covered on low flame for 15-20 minutes and when the patties are cooked and puff up slightly, turn off the gas.
Now chop 8-10 garlic cloves and fry them in 2 teaspoons of Desi Ghee. Also fry asafoetida, cumin seeds and whole red chillies.
Pour this seasoning into the dal and cover it. Now add finely chopped coriander leaves on top.
While serving, sprinkle coriander, cumin and chilli powder on top and add roasted onion with ghee.
Dal dulha is ready which you can eat with chutney, pickle or just like that.
