To make spicy bitter gourd bhujia, first wash the bitter gourd and then peel it.

Now apply 2-3 spoons of salt on bitter gourd and keep it well for 15 minutes.

To prepare the masala, mix 2 large onions, 7-8 cloves of garlic, 1 inch piece of ginger and grind them.

Add ground fennel powder, red chilli, coriander powder, turmeric powder and salt to it.

Now put oil in the pan and add nigella seeds and asafoetida and fry it.

Add the ground onion and spice paste to it and fry it well.

When the masala starts leaving oil, then understand that the masala is roasted, add some dry mango powder to it too.

Now remove the bitter gourd from salt, wash it with water and cut it into thin pieces.

Put 2 tablespoons of oil in a pan and fry the bitter gourd in it. Cook the bitter gourd until it melts and becomes crispy.

Now mix this bitter gourd in the spices and add some finely chopped green coriander on top.
