Okra Chutney
Have you never tried Bhindi Chutney? Actually, in Karnataka, Bhindi Chutney is eaten with rice with great gusto. In South India, Bhindi Chutney is called Pachadi. You should definitely try Bhindi Chutney, which can be prepared quickly, instead of Bhindi Sabzi.
First step- To make ladyfinger chutney, you will need 250 grams of ladyfinger. First of all, you have to wash the ladyfinger and dry it thoroughly. Keep in mind that the ladyfinger should not remain wet at all.
Second step- Now you have to cut the ladyfinger into small pieces. Cut the ladyfinger and keep it aside and then put the oil in a pan to heat.
Third step- Add half spoon fenugreek seeds, one and half spoon cumin seeds, 2 spoons whole coriander and a pinch of asafoetida in hot oil and fry it.
Fourth step- After roasting the seasoning, you have to add chopped ladyfinger to it. You have to cook the ladyfinger until it becomes crispy.
Fifth step- Now put oil in a pan and fry 6 whole red chillies (seeds removed) till they become crispy and take them out in a container.
Sixth step- Now to make this seasoning which enhances the taste of chutney manifold, fry 8 garlic cloves, curry leaves, mustard seeds in a pan with hot oil. Add chopped tomatoes in this seasoning and then cook till they become soft.
Seventh step- You can also add turmeric and salt in this pan. Let all these things cool down a bit and then grind them in a mixer. Keep in mind that you do not have to grind the mixture too finely.
Now your Bhindi chutney is ready to serve. You can enjoy the taste of this chutney by serving it with rice.
