What to eat first: You must have often seen many types of posts on the internet in which there is discussion about whether one should eat first, one should eat later or one should eat in between. A strong belief is to eat vegetables first, followed by proteins and finally carbohydrates. Eating food in this order does not increase blood sugar and reduces the desire to eat sweets. This also reduces fatigue and weakness. Especially people who are suffering from diabetes, they get benefit from eating in this way. It has also been said in some earlier research that if you keep in mind the order of eating things according to nutrients, then type 2 diabetes patients get a lot of benefit from it.
Analysis of multiple studies
In a New York Times report, Dr. Alpana Shukla, a physician at Will Cornell Medicine, New York, who has done research on food orders, says that there is no exact answer to this but there are some reasons in which eating in this way can be tried. When 11 studies were analyzed in 2023, it was found that people who later ate carbohydrate-rich food did not have blood sugar problems. In 2019, Dr. Alpana Shukla conducted an experiment on 15 people. These people were pre-diabetic. These people were fed skinless grilled chicken, salad and ciabatta bread in different orders on three different days. On the first day, ciabatta bread was given first and after 10 minutes chicken and salad were given. On the second day, chicken and salad were given first and bread was given later. On the last day, salad was asked to be eaten first and after that chicken and bread were given.
Benefits of eating protein first
In this sequence, after feeding, blood samples were taken every 30 minutes before eating and three hours after eating on all days. After investigation, it was found that when chicken and salad were eaten before eating bread, the blood sugar was found to be 46 percent less as compared to those who ate bread first. However, researchers were not aware of why this blood sugar decreased. People who were not pre-diabetic were not studied. Researchers said that one reason for this could be that if you eat fat, fiber and protein first, they will not allow the stomach to empty quickly. Since the stomach will already be full, absorption of carbohydrates will be very less in this situation.
