Indian food should have many Bhujia along with Dal, Rice and Roti. A dry vegetable or Bhujia increases the taste of food manifold. Although you can make Bhujia of any vegetable, but these days bitter gourd is also easily available in the market. How to make Crispy Bitter Gourd Chips?
To make crispy bitter gourd chips, wash the bitter gourd, dry it slightly and then cut it into round shapes like chips.
You can use bitter gourd either with or without peeling it. The taste will remain almost the same.
Now apply salt to these bitter gourd chips and keep them in a plate. After 10 minutes, wash them again with water and spread them on a dry cloth.
When the water on bitter gourd dries up, sprinkle 2 spoons of gram flour and also add 1 spoon of rice flour on it.
Also sprinkle salt, turmeric and garam masala on the bitter gourd and toss it so that the coating sticks well.
Heat oil in a pan. When the oil is hot enough, add the bitter gourd mixed with spices and fry it.
To fry bitter gourd, keep the flame of the gas medium high. Pour enough oil to submerge it so that the bitter gourd becomes crispy.
Roast the bitter gourd till it becomes golden and after frying, take it out on a paper napkin.
Fry all the bitter gourds in the same way and while serving, sprinkle some dry mango powder, chaat masala, salt and red chili powder.
Crispy bitter gourd chips are ready, eat them with dal. These chips do not spoil even for 10-15 days.
