Ingredients to make Chicken Rogan Josh
-1 pinch of saffron threads
-2 tbsp milk
-3-4 large cardamoms
-4-5 cloves
-3-4 green cardamoms
-8-10 black peppers
-1 mace
-¾ cup plain curd
-3 tbsp Kashmiri red chilli powder
-3 teaspoon fennel powder
-¼ teaspoon asafoetida
-1 tbsp dry ginger powder
-1 tbsp coriander powder
-1 teaspoon cumin powder
-1 teaspoon garam masala powder
-2 teaspoon salt
-5 tbsp mustard oil
-2 bay leaves
-4-5 Kashmiri dry red chillies
-1 teaspoon cumin
-1 kg boneless chicken
for tempering
-¼ cup ghee
-1-2 inch piece of Ratanjot
How to make Chicken Rogan Josh
To make Chicken Rogan Josh, first soak the saffron threads in milk. Now put black cardamom, cloves, green cardamom, black pepper and mace in a pestle and crush them lightly. Now beat the curd well with Kashmiri red chilli powder, fennel powder, asafoetida, dry ginger powder, coriander powder, cumin powder, garam masala powder and salt. After this, to prepare the gravy of Chicken Rogan Josh, put oil in the cooker and heat it. When the oil is hot, add crushed whole spices, bay leaves, dry red chilli and cumin seeds and let it crackle for 5 seconds. Now put chicken in the cooker and cook for 5 minutes. Now add curd mixture and saffron soaked in milk and mix well and add 1 cup hot water. While frying the chicken, keep the flame on medium high flame. Now close the lid of the cooker and pressure cook the chicken on high flame till 3 whistles. After this, remove the cooker from the flame and let the pressure in the cooker release on its own. Now heat ghee in a pan. Add Ratanjot to it and cook for a minute. Now filter this ghee and add it to the chicken gravy. Your tasty Chicken Rogan Josh is ready. You can serve it hot with rice or naan.
