Ingredients for making Satrangi vegetable-
1 medium size capsicum (green chili)
1 medium eggplant
1/2 cup peas
1 cup chopped cauliflower
1 tsp cumin
1 tsp garlic paste
1 tsp coriander powder
1/2 tsp turmeric
1/2 tsp garam masala powder
1/2 cup curd (curd)
1/4 cup water
2 large carrots
1 cup tomato puree
2 small potatoes
2 tablespoons vegetable oil
1/4 tsp asafoetida
1 tsp ginger paste
1 tsp dried mango powder
1/2 tsp red chili powder
1/2 tsp fennel
salt to taste
Method to make Satrangi Sabzi –
First, cut the vegetables as per your choice and keep aside. Put oil in a pan. Add cumin and asafoetida. Let them cook for a minute. Then add ginger-garlic paste. Now add tomato puree and mix. Cover the lid and let it cook for 5-6 minutes. Keep stirring it occasionally. Now add all the vegetables and mix well. Add 1/4 cup water and let it cook for five minutes. Now add turmeric, coriander powder, mango powder, red chili powder, garam masala, fennel and salt. Mix well and let it cook for 10-15 minutes. Lastly add curd and mix well. Cook for the last 4-5 minutes and switch off the flame. Serve with raita and chapati. Do try this recipe, it is nutritious as well as healthy.
