1- Peanut-Cucumber Salad
Ingredients to make Peanut-Cucumber Salad-
– Roasted peanuts 1 cup
-Finely chopped tomatoes- 2
– Peeled and finely chopped cucumber 1
-Finely chopped onion 1
– 1 finely chopped chilli
-Salt to taste
-Chaat masala 1 teaspoon
-Lemon juice 1 teaspoon
Method of making Peanut-Cucumber Salad-
To make peanut-cucumber salad, add peanuts, tomatoes, cucumber, onion and green chillies in a large bowl. Add salt, chaat masala and lemon juice as per taste, mix all the ingredients well and serve immediately.
2-Cucumber-Mint Mocktail-
Ingredients to make Cucumber-Mint Mocktail-
-Cucumber 1
-Mint leaves- 1 bunch
-Lemon juice – 4 teaspoons
-Honey – 2 teaspoons
-Ginger 1 piece
-Club soda 2 cups
-Water 1 cup
-Ice cubes as needed
-a pinch of salt
How to make Cucumber-Mint Mocktail-
Peel the cucumber and cut it into small pieces. Keep some mint leaves aside for decoration. – Put chopped cucumber, lemon juice, mint, water, honey, ginger and salt in a blender and blend well. The mixture should look like a puree. Strain this mixture. Put ice cubes in a serving glass. Pour small amounts of the prepared mixture on top. Pour club soda over it and mix the mocktail gently. Garnish with mint and serve chilled.
3- Cucumber Pachadi-
Ingredients for making Cucumber Pachadi-
-Dried red chilli 2
– 1 teaspoon mustard
– 1 cup beaten curd
– Salt to taste
– Water as needed
-Grated cucumber 2
– 2 teaspoons finely chopped chili
-Grated coconut 1/2 cup
-Cumin 1/2 teaspoon
-Coconut oil 1 1/2 teaspoon
-Curry leaves 10
-Coriander leaves for garnishing
Method of making Cucumber Pachadi-
To make this Kerala dish, first make Pachadi. To make Pachadi, put coconut, cumin seeds, green chillies and two spoons of water in a mixer and grind it finely. – Now put grated cucumber, salt as per taste and coconut mixture and curd in a big vessel and mix all the ingredients well. – Now add tempering to the cucumber Pachadi. For this, heat the pan on medium flame and add coconut oil to it. Add curry leaves, dry red chillies and mustard seeds to the coconut oil. When the mustard seeds start crackling, add the tempering to the prepared Pachadi and mix it. Serve with rice or dosa.
