Ingredients for making Rabri Kheer-
– 1/4 cup coarse rice
– 1 liter full cream milk
-1 tsp ghee
-2 tbsp almonds
– 2 tbsp broken cashews
– 1 tablespoon chironji
– 2 tablespoons dry shredded coconut
– 1 tablespoon chopped pistachios
-half cup sugar
-Half a teaspoon cardamom powder
Method of making Rabri Kheer-
To make kheer, first wash the rice thoroughly two to three times. After this, soak the rice in water for about 25 minutes and keep it aside. After this, put a cooker on the gas. Add 3 to 4 spoons of water in the cooker and stir it. By following this tip, you will get the benefit that while pouring milk in the cooker, it will not stick to the cooker. Now put one liter of full cream milk in the cooker. Now cook this milk on medium flame till it thickens after two to three boils. Now heat one spoon of ghee in another pan and put all the chopped dry fruits in it and dry roast it for one minute. When the color of the dry fruits starts becoming light golden and crunchy, take them out and keep them aside in a plate. Now take out one ladle of boiling milk in a separate bowl and put some saffron threads in it. Now at this stage, separate the water from the rice soaked in milk and put them in the milk. After this, add the already roasted dry fruits in the milk and stir well.
After this, cover the cooker and cook the kheer on medium flame till one whistle comes. As soon as you feel that the whistle is about to come, lower the flame of the gas and cook the kheer for 2-3 minutes more. After this, turn off the gas and let the pressure of the whistle release. After this, open the lid of the cooker, add half a cup of sugar to it and cook the kheer on low flame. After this, add half a teaspoon of cardamom powder and saffron milk to the kheer. When the kheer cools down a little, put a bowl of kheer in a grinding jar and prepare its paste. Now put this paste in the kheer kept in the cooker and cook for two to four minutes more. Now add raisins to this kheer and stir the kheer for one more minute. Your tasty rabridaar kheer is ready.
