Rice: one cup, Egg: two, Small onion: one, Garlic-ginger paste: one teaspoon, Green chili: one, Garam masala: one teaspoon, Cumin: 1/2 teaspoon, Turmeric: a pinch, Tomato: one, Red chili powder: one teaspoon, Oil: three teaspoons, Green coriander, Salt: according to taste (If you have soya sauce, tomato sauce and chili sauce, you can use one teaspoon each.)
First of all, finely chop onion, tomato, green chilli and green coriander. Then turn on the gas and place a big pan. Now add oil in the pan. When the oil is hot, add cumin seeds. Keep the flame low till the egg rice is ready. After cumin seeds, add chopped onion and fry till the raw smell goes away. Then add tomatoes and cook till it becomes soft. After this, add garlic-ginger paste, green chilli, turmeric, garam masala, red chilli powder and mix well. (Only after this add soya, tomato and chilli sauce. Otherwise you can skip this step.) Now break two eggs in the pan and cover it and cook for two minutes. After two minutes, slowly mix the eggs with the spices. At the same time, add salt as per taste. Finally add rice and mix well and heat for two minutes. Finally add green coriander, delicious egg rice is ready to eat.
