Boil or fry the potatoes well, so that they become soft. You can also cook them in microwave or oven. Mash the potatoes well. If you want, you can also grate potatoes. Add salt, chilli, cumin, coriander and other spices to the mashed potatoes. If you want, you can also add some green chili and chopped ginger. Allow the stuffing to cool, then use it to make parathas.
Potato stuffing does not come out, so try these remedies:
Keep the dough soft: The dough should be soft for the paratha. The parathas do not burst while kneading a little wet dough, and the stuffing does not come out.
Keep the stuffing dry: Potato stuffing should not have much water. Mash the stuffing well and remove the excess water. This reduces the risk of bursting of paratha.
