Boil or fry the potatoes well, so that they become soft. You can also cook them in microwave or oven. Mash the potatoes well. If you want, you can also grate potatoes. Keep the dough soft: The dough should be soft for the paratha. The parathas do not burst while kneading a little wet dough, and the stuffing does not come out.
