Ingredients for Makhana Chikki
100 gms makhana, 250 gms jaggery, 100 gms peanuts, 50 gms white sesame seeds, half a teaspoon cardamom powder, half a teaspoon black pepper powder, half a teaspoon dry ginger powder, 2 pinches of baking soda
Makhana Chikki Recipe
First of all, dry roast the makhana very well. After this, dry roast the peanuts as well and make a coarse powder of it. Now lightly roast the sesame seeds. Now break the jaggery into small pieces and put it in a pan and make syrup by stirring it continuously on low flame. Here you have to keep in mind that till the syrup becomes crystal i.e. hard, stir the jaggery continuously in the pan. To check the hard syrup, keep water in a bowl and add 2 drops of syrup in it. If the jaggery is breaking after hardening, then the syrup is ready, if the drops of jaggery are not breaking by breaking with the hand after dropping them in water, then cook the syrup a little more. When the crystal hard syrup is ready, add black pepper, cardamom powder and dry ginger powder, 2 pinches of sweet (baking) soda and stir well. Now add makhana and peanuts in this hot syrup and mix. Add roasted sesame seeds from above. All things have to be mixed in hot syrup only. Apply ghee on a big plate and spread the entire mixture. After about an hour your Makhana Chikki or Makhana Balls will be ready. You can eat these during the fast.
