Ingredients for Tomato Rice
Cooked rice – 2 cups
Tomatoes finely chopped – 2
Onion finely chopped – 1
Ginger paste – 1/2 tsp
Chana dal – 1/2 tsp
Urad dal – 1/2 tsp
Green chilli – 1
Mustard – 1 tsp
Cumin seeds – 1 tsp
Fenugreek seeds – 1/4 tsp
Cinnamon stick – 1 inch piece
Cloves – 3-4
Turmeric – 1/4 tsp
Kashmiri red chilli powder – 1/2 tsp
Coriander powder – 1/2 tsp
Chopped cashews – 1 tablespoon
Curry leaves – 1 tablespoon
Chopped mint leaves – 2 tablespoons
Chopped coriander leaves – 2 tbsp
Oil – 1-2 tbsp
Salt – to taste

Tomato Rice Recipe
To make tomato rice full of taste, first cut mint leaves, green coriander leaves into fine pieces. After this, cut cashews into pieces as well. – Now heat 2 tablespoons of oil in a pan. After the oil is heated, add mustard seeds, cumin seeds, chana dal, urad dal and fry it. After a few seconds, add fenugreek seeds and curry leaves to the pan and fry it. – After this, add cashew pieces to the pan and fry till they become golden brown.

– Now finely chop the onion and put it in the pan and fry it on medium flame till it becomes light brown. – After this, add green chilli and ginger paste in the pan and fry it while stirring with a spoon. – After this, add finely chopped tomatoes in the pan and cook till they become soft. When the tomatoes become soft, add turmeric, red chilli powder, coriander powder, mint leaves and salt as per taste and cook while mixing.

– When all the ingredients in the pan are cooked well, add cooked rice to it and cook while stirring with a spoon. – Now cover the pan and cook the rice for 5 minutes. – During this time keep stirring the rice with a spoon in between. After this turn off the gas. Delicious tomato rice is ready. It can be served with chutney or curd.
