Raw mango chutney
To make raw mango chutney, you will need a cup chopped raw mango, 3/4 cup jaggery, a teaspoon finely chopped ginger, 1/4 short spoon red chili powder, 1/4 small spoon turmeric powder, half small spoon crushed cumin, half big spoon lemon juice and salt. First step- First of all, peel and cut the raw mango. Now put half cup of water in a pan and boil it well.
Second step- After this you have to put the mangoes in this water and cover the pan so that the mango gets well cooked and softens.
Third step- Now add jaggery, ginger, cumin, turmeric powder, red chili powder and salt to this pan. When the jaggery melts, then you have to mix all these things.
Fourth step- After this reduce the flame of gas and let this mixture cook for about 10 minutes.
Fifth step- After about 10 minutes you can add lemon juice to this sauce. Let the sauce cook for about 2 minutes after adding lemon juice.
Sixth Step- Finally you have to turn off the gas and let this sauce cool down.
You can serve this chutney with roti or paratha. By following this recipe, you can make raw mango chutney for three to four people. You can store this sauce in the fridge.
