First of all, peel the bitter gourd and then apply salt and leave it for some time.
Now, depending on the bitter gourd, take one or two big onions and cut them into long and thick pieces.
To add to bitter gourd, chop 3-4 cloves of garlic and 1 green chilli.
Now wash the salted bitter gourd and cut it into thin and round shapes.
Take a pan and add mustard oil in it. When the oil is hot, add fennel in it.
Now add garlic and green chillies in oil. After this add turmeric according to the vegetable.
Now add chopped bitter gourd and chopped onion and cook on high flame for some time.
Now add coriander powder, salt and if desired, some red chilli powder.
Turn the gas on medium flame and cook the bitter gourd while turning and stirring.
If you want, cover the bitter gourd for some time so that it melts and cook.
When the bitter gourd is almost cooked, add about 1 teaspoon sugar to it.
Add half spoon mango powder to bitter gourd and fry it on high flame till it becomes slightly crispy.
