To make Gujiya, the most favorite dish on Holi, Khoya is required, which is purchased in large quantities. Apart from this, people also prepare paneer curry on the festival. But, every year people fall ill due to adulterated khoya and cheese.
There is a need to be a little careful so that this does not happen this time. To prepare sweets for any festival or event at home, the first thing required is Mawa. Similarly, a lot of cheese is also sold for making special vegetables. But, have you ever wondered how pure is the khova or paneer that you buy from the shop? These days, there is a lot of black marketing of adulterated khova-paneer in the market.
How to make fake khoya and cheese
Devendra Kushwaha of Khargone, who has about 20 years of experience, told local 18 that many types of adulterated food items are being sold in the market. Most adulteration occurs in milk, khoya and cheese. Shopkeepers use sweet potatoes, water chestnut flour and white flour instead of milk to make khova. Chemicals are also added for whitening. Similarly, to make cheese, shopkeepers extract cream from milk. Then arrowroot is added to thicken the milk.
Identification of Pure Khoya
1 – Pure i.e. real khova has a faint fragrance.
2- Pure mawa leaves some ghee. Rub mawa on your hands. If ghee comes out then it is pure mawa.
3- Pure mawa dissolves in the mouth and does not stick.
4- Pure mawa does not break when rubbed, but adulterated mawa disintegrates when rubbed.
5- Add some sugar to mawa and heat it. If it starts releasing water after some time, then there is adulteration in the mawa.
6- Pure mawa dissolves easily in water. Adulterated mawa takes some time to dissolve in water.
Identification of pure cheese
1- Try mashing a piece of cheese with your hands. If it breaks and scatters then understand that it is adulterated.
2- Boil the cheese in water and cool it. After this, put a few drops of iodine tincture on it. If the color of the cheese turns blue then understand that it is adulterated.
3- Fake cheese is too tight, which feels like rubber when pulled.
There is a crowd of customers
Let us tell you that 37 year old Devendra Kushwaha has been making khoya and paneer for the last 20 years. Earlier he had to make mawa and paneer at another shop. Later started his own shop. His shop operates under the name of Gaurav Doodh Dairy on Sanawad Road in the city. For almost 10 years he has been selling his own 100 percent pure khoya and cheese here. They also make milk, curd, shrikhand, ghee, chakka and butter.
Earn Rs 40,000 per month
Devendra says that he used to work elsewhere for Rs 6000 a month. Then opened his own shop. Feed milk and milk products including pure mawa, cheese. This is the reason why there is a crowd of customers. Now he earns around Rs 40,000 per month. 40 kg of khoya and equal amount of cheese is sold in a day. Made on order and given separately. The daily consumption of milk is 550 litres.
