Stuffed eggplant is very tasty to eat. The special thing is that you can easily store this vegetable for a week after making it. You can eat it as a side vegetable with dal or any gravy vegetable. For stuffed brinjal, you have to take about 5-6 small sized brinjals and wash and clean them.

Now make two cross cuts in the brinjal with the help of a knife and prepare the masala.

For spices, mix 1 big onion, 1 teaspoon ginger-garlic paste, 2 ground green chillies.

Now add 1 teaspoon turmeric powder, half teaspoon red chili powder, 1 teaspoon garam masala powder, 1 teaspoon coriander powder to this masala.

The spices required include 2 teaspoons of ground fennel, 1 teaspoon dry mango powder, a little asafoetida, and fenugreek seeds.

Salt as per taste and mustard oil is required to fry the brinjal.

Now fill all the raw spices inside the brinjal, opening them well, and keep sticking them.

Now pour oil in the pan and add fenugreek seeds along with asafoetida. After this, put the brinjals filled with spices in the pan.

After adding the brinjal, cover it for a while and cook on low flame for about 10-15 minutes.

Turn the bangers one by one with a small spoon and let them cook on both sides.

Roast the brinjal in the open for a while and then eat it with roti or paratha when it cools down.
