Ingredients to make Chicken Changji –
750 grams chicken
300 ml milk
1/2 tbsp ginger paste
250 ml tomato puree
1/2 tbsp chaat masala
80 grams fresh cream
2 tbsp lemon juice
2 chopped green chilies
1/3 cup Lotus Seed Pops
50 grams cashew nuts-roasted
salt as required
30 grams ghee
1 boiled egg
1/2 tbsp garlic paste
1 tbsp coriander powder
1/4 tsp garam masala powder
1/2 tbsp red chili powder
1 inch chopped ginger
1/2 tbsp kasoori fenugreek leaves
3 medium finely chopped onions
1/4 cup water
How to make Chicken Changji –
Fry the chicken pieces in ghee and keep it aside. Fry the onion in ghee till it turns brown and keep it aside. Then fry the makhana and keep it aside. Heat ghee in a pan and add milk, ginger garlic paste, tomato puree, coriander powder, red chili powder and garam masala. Cook on medium heat for 10 minutes. Then, grind cashews and fried onions with little water to make a smooth paste. Add cashew-onion paste to the pan and add chaat masala, salt and cook for 7 minutes. Add fresh cream, kasoori methi, green chillies, ginger, lemon juice and mix well. Add the roasted chicken to the gravy and cook for 6-7 minutes. Garnish with green chillies, grated ginger, makhana and cut boiled eggs in half. serve hot.
