Ingredients for making Aloo Kulcha-
For filling-
Boiled potatoes-6
Red chili powder- 1/2 tsp
Green chilies chopped – 2
Chaat masala – 1 tsp
Green coriander leaves – 1 tbsp
– Salt – as per taste
Ingredients for making Kulcha-
– Flour – 2 cups
Yogurt – 1/2 cup
Baking Soda – 1/2 tsp
Sugar powder – 2 tbsp
– dry flour
– Salt – as per taste
How to make Potato Kulcha-
To make Aloo Kulcha, first boil the potatoes, peel them and mash them in a vessel. Now add red chili powder, garam masala, chaat masala, chopped green chilies, coriander leaves and salt to the mashed potatoes and mix them well.
Now in another vessel, add refined flour, sugar, baking soda, curd and salt to taste and mix. Now add water little by little to this dough and make a soft dough from it. After kneading the dough keep it aside for 20 minutes.
After the stipulated time, add a spoonful of oil to the dough and knead it once again. Now prepare big balls of this dough. Now take a big ball and press it lightly. Now put dry flour in it and roll it lightly.
Now put a spoonful of potato mixture in it and pack it from all sides and make a dough of it. Now put coriander leaves on one side of the dough and press it. After that, after turning the dough, apply a little flour in it and roll it into the shape you want.
Now heat a nonstick tava (griddle) on medium heat. Now pour a little water on the rolled kulcha and put it on the pan. Keep in mind that place the side of the Kulcha on the pan where the coriander leaves are not attached. By applying water, the kulcha will stick well on the pan. When the kulcha is cooked well from one side, then turn the tawa upside down on the gas flame. By doing this, the kulcha on the side of the coriander will also be cooked well.
When the kulcha is cooked well, remove it from the pan and apply butter on it. Your potato kulcha is ready. Serve it with curd or raita.
