Ingredients for Sprouted Matki Sabzi
One cup moong, 2 onions, 1 tomato, 3 spoons curd, 2 spoons garam masala, 2 spoons dry coconut, 2 spoons dry coriander masala, half spoon cumin, curry leaves, few coriander leaves, 2 green chillies, one teaspoon red chili powder
Method to make sprouted matki sabzi:
To make sprouted matki sabzi, first of all, before making matki sabzi, wash it thoroughly and soak it for 8 hours at night. Now put the soaked matki in the cooker and add 2 glasses of water in it and boil. Switch off the cooker again after 2 whistles. Now we will prepare the masala for the vegetable. In a mixer jar, add one chopped onion, 1 tomato, 3 teaspoons curd, 2 teaspoons garam masala, 2 teaspoons dry coconut, 2 teaspoons dry coriander masala, half teaspoon cumin, 2 green chillies and one teaspoon red chilli powder and grind very finely. Grind. Now turn on the gas and keep the pan.
Now add one spoon of oil in it and fry the matki well. Take out the pot and keep it in another vessel. After that now add 2 spoons of oil in the pan. When the oil becomes hot, temper it with half a teaspoon of curry leaves. Now add a finely chopped onion to it and fry till it turns brown, when the onion turns red then add the prepared masala to it. Fry the masala well. When the masala turns red, add roasted matki to it and mix well. Now add water to it and keep it covered to cook. Turn off the gas after 10 minutes. Your curry vegetable is ready. You serve it with rice or roti.
