Ingredients for Boondi Kadhi Batter:
1.5 cup curd, 1/4 cup gram flour, 1 tsp salt, 1/4 tsp turmeric. 1/2 tsp red chilli powder, 3 cups water (mix everything and make a smooth paste)
Ingredients for Boondi Kadhi Tadka:
1 tbsp oil, 1/2 tsp mustard, 1/2 tsp cumin, 1/4 tsp fenugreek seeds, 1/2 tsp fennel, 2 green chillies, cut into two, 2 cloves, 2 bay leaves , 1/4 tsp asafoetida, 10-12 curry leaves
Method to make Boondi Kadhi:
To make Boondi Kadhi, first mix 1/4 cup gram flour in 1.5 cups curd. Heat oil in a pan and add mustard, cloves, fenugreek seeds, cumin, green chilli, asafoetida, curry leaves, red chilli powder and turmeric powder and fry for 20-25 seconds. After that add curd-gram flour solution and cook it well while stirring continuously. Cook the mixture while stirring continuously until it boils. Reduce the flame to medium low and cook the mixture for 25-30 minutes. Keep stirring in between. Then add coriander powder, salt and garam masala. Now add 1 cup dry boondi, 1 spoon kasoori fenugreek and mix. Now heat 1-2 tbsp ghee in a pan and add 2 dried red chillies and 1 tsp Kashmiri red chilli powder to add the finishing touch. Garnish with some coriander leaves and serve with rice.
