During summer, you can prepare and eat vegetables using tomatoes only. When there is no vegetable available in the house or you feel like eating something different, then you can prepare tomato launji and eat it. The special thing is that you can prepare tomato launji and keep it for a long time. Tomato launji tastes very tasty with puri, parantha and roti. Know how to make tomato launji?
Ingredients to make Tomato Launji
- About 5-6 large ripe tomatoes
- 1/2 tsp cumin
- 1 teaspoon lightly ground fennel
- 1 tsp red chilli powder
- ½ tsp turmeric powder
- ½ tsp coriander powder
- 3 tbsp sugar or jaggery
- salt as per taste
- 2 tbsp desi ghee
- 2 green chillies finely chopped
- Garlic 2-3 cloves chopped
Tomato Launji Recipe
First of all, wash the tomatoes thoroughly with clean water and cut them into thick pieces.
If you do not like the peel of tomatoes, then you can grate them with a thicker size.
Now to make tomato launji, add ghee in a pan and heat it.
Add cumin and fennel together in ghee and then add chopped green chilli and garlic.
After lightly frying these things, add red chili powder, coriander powder and turmeric powder to it.
Now add all the chopped tomatoes in it and cover them with a vessel.
You have to cook on medium flame until the tomatoes melt well.
You can add salt beforehand so that the tomatoes melt quickly.
When the tomatoes melt slightly, add sugar or jaggery, whatever you want.
If the launji seems too thick, you can add half a cup of hot water to it.
After adding water, keep cooking the launji till it gets a good boil.
When all the ingredients are melted and cooked well, turn off the gas.
Delicious tomato launji is ready. Eat it with rot, parantha or puri.
Tomato launji can also be prepared and stored in the refrigerator for a week.
