To make Tinda Masala, you need fennel, cumin, fenugreek, coriander, turmeric, red chili powder, salt, a little amchur. Onion, Garlic, Ginger, Tomato and Green Chillies. Ghee and mustard oil.

First of all roast fennel, cumin, fenugreek, coriander on low flame. Now grind them by adding turmeric, chilli, salt and a little amchur. Yours Stuffed Spices is ready. Take out the dry spices and make a paste of onion, garlic, ginger and green chilies (optional).

Now cut and wash the sticks. Roast them in ghee or oil. Now take them out in a vessel. Now keep the pan on the gas. Add asafoetida, cumin seeds to it. After this, fry the ginger-garlic paste. Add some salt and red chili powder to it. When it gets fried a little, then add finely chopped tomatoes. When it starts roasting, add dry ground spices. The spices are already roasted, so when the onion-garlic paste is fried, then add the fried tinde to it. Stir for 2 minutes then cover. Keep the flame low because if you have not added water then it will burn. You can sprinkle some water while making the masala. When the tinde is cooked, turn off the gas. Your spicy tinde is ready.
