To make it, wash the tinda well and then peel it and cut it lengthwise. Then cut the onion lengthwise and wash the green chilies and cut them in the middle. Now beat the curd and keep it. Now heat water in a vessel and boil tindo in it for 10 to 12 minutes. To make tinde, heat oil in a pan and then add cumin seeds to it. Now add green chilies and onions and fry them. When the onion is fried, add all the spices to it, mix it well and cook for 5 to 7 minutes. Now add the whipped curd to it. Mix well and keep stirring. Keep in mind that the spiced tinde are made of light gravy, so add water only if needed. Then mix well. Now filter the boiled tinde with water and mix it in the gravy. Mix the vegetable and then keep it covered for 7 to 9 minutes. Then add garam masala and garnish with coriander leaves. Tinde’s spicy curry is ready.
