Ingredients for making Vegetable Korma-
2 medium onions
1 big capsicum (green chili)
1/4 cup chopped green beans
1/2 cup chopped cauliflower
1 tsp ginger paste
1 tbsp fennel seeds
1/2 tbsp coriander powder
1/2 tbsp dried mango powder
2 tablespoons virgin olive oil
1/4 cup curd (curd)
1/4 tsp asafoetida
2 medium tomatoes
1 large carrot
1/4 cup peas
1 tsp garlic paste
4 tbsp coconut powder
1/2 tbsp red chili powder
1/4 tsp garam masala powder
salt as required
1 small potato
1/2 tbsp cumin
Method to make Vegetable Korma-
Peel the vegetables and cut them into small pieces. Collect them all separately. Put the coconut powder along with the fennel in a blender. Add curd and blend to make a thick paste. Heat oil in pressure cooker. Add hing, cumin and let them splutter for a few seconds. Add chopped onion, ginger paste, garlic paste and fry for two minutes. Now add chopped tomatoes and mix well. Cover the cooker with a lid and let the spices cook for 5 minutes. Now add chopped potatoes, carrots, beans, cauliflower, capsicum and peas. Also add salt, red chili powder, coriander powder, mango powder and garam masala. Give a good mix. Add 1 cup of water and close the lid. Pressure cook for 1-2 whistles. Now open the lid and add coconut paste to it. Give a good mix and cook for 4-5 minutes. Vegetable Korma is now ready to be served. Serve with rice or roti and enjoy.
