Ingredients for making Malpua:

  • 1 cup fine semolina
  • A little less than 1 cup fresh cream
  • 1/4 teaspoon ground fennel powder
  • 1/4 tsp cardamom powder
  • 1 pinch nutmeg powder
  • 1/4 tsp cinnamon powder
  • 1/4 tsp baking powder
  • half a cup of powdered sugar

How to make Malpua:

  • Put all the ingredients in a bowl and mix them well.
  • Now prepare a smooth batter by adding milk. It will require about 1 cup of milk from which save 1/4 cup of milk.
  • Now keep the batter aside for half an hour to swell and on the other hand prepare the syrup for Malpua.
  • To make syrup, take one and a half cups of sugar and one cup of water.
  • Make one string syrup on medium flame. That is, by the time sugar is simmered, syrup will be ready.
  • Now check the batter and add the remaining milk and mix the semolina again and stir.
  • The batter of Malpua should be a little thick. If the batter is too thick then you can add more milk to it.
  • Now place a flat bottom pan on the gas and heat the oil in it on medium flame.
  • Pour 1 spoon of batter in the oil which will start spreading as soon as it is poured. Keep the flame of the gas medium.
  • Now pour oil over the Malpua and fry it and then turn the Malpua.
  • Now bake the light golden brown Malpua from both the sides and then take it out.
  • Remove extra oil by pressing the Malpua with tissue paper and then put it in the syrup while it is still hot.
  • After some time of putting it in the syrup, take out the Malpua and place it in a plate and garnish it with cashews and pistachios.
  • Tasty Malpua is ready, which will taste better than the market Malpua.
  • If you want, you can also apply whipped rabri or cream on it which will make it taste even better.
