Whenever you feel like eating something sweet, the first thing that comes to your mind is semolina pudding. There is hardly anyone who doesn’t like this juicy, melt-in-the-mouth, granular and full of dry fruits pudding. The best thing is that to make it, there is no hassle like moong dal halwa or carrot halwa. It is prepared very quickly and tastes very tasty. However, many people complain that their halwa often turns out to be very dry. It does not have that grainy and juiciness that is usually found in semolina halwa made by confectioners. How to make a juicy semolina pudding like Halwai?
Tip 1- Correct measurement is most important
To make perfect semolina halwa like halwai, the most important thing is correct measurement. If you know in what proportion to take semolina, sugar and ghee, then the halwa becomes perfect every time. So note down – if you are taking a bowl of semolina, then measure from the same bowl and take about 3/4 bowl of desi ghee and a cup of sugar. If you like a little more sweetness then you can also take one and a half cup of sugar. This ratio always fits exactly right.
Tip 2- Fry semolina well in desi ghee.
The first step to make halwa is to fry semolina well in desi ghee. Fry it while stirring on low flame until its color becomes light golden and a pleasant aroma starts emanating from it. As soon as the semolina is roasted properly, it will start releasing ghee.
Tip 3- Adding these 1 things to semolina will give it a confectionary taste.
Once the semolina is roasted well, add about two spoons of gram flour to it. This is the step through which semolina halwa tastes exactly like halwa. After adding gram flour, stir the semolina for two more minutes, this will remove the rawness of the gram flour and will add a nice aroma and texture to the halwa.
Tip 4- Make syrup like this for juicy halwa
If you want to make semolina halwa juicy then prepare its perfect syrup. For this, mix about four bowls of water in one bowl of sugar and keep it aside to make syrup. You can also add a little cardamom powder for flavour. As soon as the sugar melts, turn off the gas. The syrup is ready.
Tip 5- Add a little syrup at the end and fry
After the semolina and gram flour are roasted well, add a little syrup to the halwa and cook while mixing well. Cook the halwa until it starts leaving the pan. Lastly, add dry fruits roasted in ghee and a little remaining desi ghee to the halwa and cook for two more minutes. The halwa will be completely juicy and grainy.
