Bottle gourd barfi is a unique and delicious sweet in the traditional cuisine of Uttar Pradesh, which provides a complete combo of taste and health. The Cultural Department of Uttar Pradesh describes it as light, nutritious and ideal for festivals. Bottle gourd, generally considered a vegetable, is transformed here into a scrumptious barfi, which despite being sweet, remains low calorie and healthy.

The medicinal properties of bottle gourd (bottle guard) make it even more special. According to Ayurveda and modern studies, bottle gourd contains 96 percent water, low calories, fiber, vitamin A, potassium, calcium, magnesium and antioxidants.

Being rich in fiber, it provides relief from constipation, gas, acidity and indigestion. Gives coolness to the stomach and strengthens the digestive system. Less calories and more water reduces appetite and is also helpful in weight loss. Bottle gourd is also effective for heart health. The potassium found in it controls blood pressure, reduces cholesterol and makes the heart healthy. It is a natural detoxifier and makes the skin glowing. Bottle gourd has low carbs and sugar metabolism improving properties, which keep blood sugar stable.

Bottle gourd barfi is light, nutritious and best for festivals. This sweet recipe is also easy to make. For this, first of all wash the gourd, peel it, remove the seeds and grate it. After this, add grated bottle gourd in 2 tablespoons of ghee in the pan and fry for about 10 minutes on medium flame. After this add sugar in it and cook till the water dries. Add mawa and remaining ghee to it and fry until the mixture becomes thick. Add cardamom powder on top for taste. After this, after it cools down, cut it into the desired shape.
