To make Bharva Bitter gourd, you need bitter gourd, onion, a raw mango, salt, chili, fennel, cumin, turmeric powder, coriander powder and mustard oil.

First of all wash the bitter gourd and peel it well. Then make a long cut from the middle in it. Put it in a bowl by mixing salt and turmeric. You can keep them like this for at least 1 to 2 hours. Till then cut the onion long and peel the raw mango and grate it. Now heat water in a vessel. When the water starts boiling, add bitter gourd to it. Boil bitter gourd for 10 to 12 minutes. Then filter it and cool the bitter gourds. When it cools down, take out the seeds from it with the help of a spoon and keep all the bitter gourds aside.

To make it, heat mustard oil in a pan. Then add cumin seeds and add onion. Let it fry well. When roasted, add raw mango to it. and run. Add all the spices. And mix well. If less oil is added then add little water and mix well. Stuffing is ready. Take it out in a plate and cool it. Now do this again in all the bitter gourds. Heat a little mustard oil again in the pan in which the masala is made, and then put all the filled bitter gourds in it. (If you want, you can tie a thread in the bitter gourd.) Fry it well from both the sides. If the masala remains, then put it in the pan at the end and make it crispy. Bitter gourd is ready, serve it with poori, paratha or dal rice.
